Sarno, a passionate advocate for plant-based cooking, has partnered with The Little Mushroom Co. and Smithy Mushrooms to bring this vision to life. What was once a hub for the UK’s broiler chicken industry is now a beacon of sustainable agriculture, cultivating mushrooms instead of raising animals.

On social media, Sarno shared his excitement about this decade-long dream becoming a reality. “We’re releasing a dream project I’ve been working on for a decade that’s finally come to life!” he posted on Instagram. 

The farm’s transformation has taken five years of dedicated work, repurposing the old chicken sheds into state-of-the-art mushroom-growing facilities. Sarno’s culinary vision has always been about pushing boundaries, and this project is no exception. 

“As a chef, I’ve always wanted to push the boundaries, especially within the plant-based cooking world,” Sarno added, “And now I get to showcase mushrooms in ways you’ve rarely seen before.”

Collaborative Effort and Sustainable Future

The farm’s conversion highlights the similarities between chicken farming and mushroom cultivation, making the transition smoother than one might expect. “What if less water, less land, and minimal resources could create healthier, more sustainable, delicious food?” Sarno pondered on LinkedIn, emphasizing that this isn’t just a theory—it’s a reality.

The collaboration with The Little Mushroom Co., led by Harry Irwin and Claire Bullen, and the expertise of John Dorrian from Smithy Mushrooms, has been crucial to the success of this project. Together, they’ve turned a traditional farm model on its head, demonstrating a sustainable alternative that could revolutionize the future of food production.

“This chef-driven transformation is a game-changer—for animals, for farmers, and for us who love to eat and cook,” Sarno said, reflecting on the broader impact of the project. The transition to mushroom farming not only spares countless animals but also offers a viable future for farmers looking to move away from animal agriculture.

A Parallel Journey in the U.S.: From Cattle and Chickens to Mushrooms

Across the Atlantic, another inspiring transformation is unfolding in Southwest Arkansas, where Jennifer and Rodney Barrett have shifted from raising cattle and chickens to growing mushrooms. This change was sparked by health issues that led the couple to adopt a plant-based diet. As their health improved, they began to question the ethics of their farming practices.

In 2016, after completing a plant-based program, Jennifer felt a profound shift, realizing she could no longer participate in the cycle of animal suffering. This revelation led the Barretts to cancel their poultry production contract and stop breeding cattle, despite the financial strain.

Their transition was supported by Renee King-Sonnen from Rowdy Girl Sanctuary and the Rancher’s Advocacy Program (RAP), which helps farmers move away from animal agriculture. “Our hearts have been opened, and we continue to evolve,” Jennifer reflects, expressing hope for the future.

Both stories showcase a new direction in agriculture, where innovation and ethics come together to create a more sustainable and compassionate world. Whether in the UK or the US, these pioneering efforts are paving the way for a future where mushrooms, not meat, are at the heart of our plates.
